Where does Noushi Pastry source ingredients?
We aim to support our local NY, Palestinian, Mexican and Lebanese communities
through our pastries as we continue to grow our business. Our Extra Virgin Olive Oil
is sourced through a collective of farmers, single sourced, directly from Palestine
through Olive Odessey, a Palestinian woman owned business. Our 2025 batch is
sourced from Jenin (Farmer Mohammad Zein Al-Dein) and Jerusalem (Farmer
Ayda Saadah), you can learn more about the growers and their communities here.
Our Green Thyme used to make Za’atar is grown by close family friends of ours and is ground in Ramallah, Palestine through Saleh Khalef spice shop, then mixed through our own recipe. Our Sumac and Caraway from Al Quds Orchard single source organic family farm in Jenin, Palestine. Our coffee a blend of Mayorga, Don Pedro’s Farm in Chinantla Mexico and Bin Izihman Jerusalem Coffee .
We source select produce from local farms seasonally, such as Halal Pastures Organic Farms, Norwich Meadows .
Because some of our ingredients make there way here through occupation, please keep in mind, prices for our pastries may fluctuate. We aim to be as transparent as we can about any changes that occur throughout our market seasons.
We are always working to also grow more partnerships with local farmers and source our ingredients responsibly and meaningfully as we continue to learn as a small business.
