Story: Noushi twists are a fun spin on the classic Manoushi street food commonly found in bakeries and kiosks in Palestine and Lebanon. This twist is laminated dough woven to represent our interconnectedness with za’atar (a combination of green thyme, toasted sesame seeds, sumac) and olive oil to create a crispy, fluffy pull-apart experience. Story: Toasted pistachio praline paste, pomegranate cremeaux, pomegranate mousse, topped with a pomegranate ginger gelee, pomegranate rubies, and held in a habet el barakeh (nigella seed) semolina pâte sucrée shell. Flavors reminiscent of walking through old Bethlehem with freshly squeezed pomegranate juice and pistachio snack — brought together with the symbolic colors of Palestine & Mexico.

Story: Inspired by a temperate autumn day — walking through the busy streets of Mexico City and sitting down for a communal meal down a side road to feel the healing warmth of bayleaf, cinnamon and great company. These bites are rich with Valrhona 66% Chocolate cremeaux. Infused with bayleaf, cinnamon sticks, guajillo and cayenne peppers, hazlenut and kataifi center. Topped with a dark chocolate, chili, olive oil glaze, these treats sit on a chocolate cayenne sable cookie and are hugged by a toasted hazelnut crunch.

Story: An ode to Chef Ranya’s father, Juan, this take on tiramisu captures the experience of a cup of arabic coffee — shared seaside, honoring Teta, flipping the cup over to read the family fortunes and sharing stories of what lessons and wonders life may have to offer.

Made with a cardamom mousse, arabic coffee, milk soaked harisseh, a coffee, evaporated and condensed milk gelee, and a toasted sesame and cardamom pâte sucrée cookie. Surrounded in a white chocolate and evaporated milk glaze to represent the signature cup.
