Significance

Pomegranate: As you walk through the bustling markets of Palestine, in Jenin, Old Bethlehem, Jerusalem, Nazareth and beyond, you will see vendors clamping down on iron juicers at lightening speed, squeezing beautifully rich pomegranate juice. Pomegranates have been enjoyed in the region for thousands of years, brought to Palestine by traders from present day Iran. They are a symbol of fertility and rebirth in a land that has been disconnected but still strongly woven together through flavors and humanity.

Dahnoon: The design of this tart is inspired by the Poppy flower. This flower carries great significance in Palestinian culture as the representation of resilience, rising like a phoenix from the ashes. The colors of the tart are an ode to Palestine, Lebanon and Mexico.
